Slow Cooker Taco Al Pastor Noodle Soup

Flavored with chipotle, pineapple and lime, this pork and noodle soup inspired by tacos al pastor is garnished with avocado, cilantro and crumbled feta cheese.

Ingredients
8 oz | No Yolks® Broad |
1 (about 12 oz) | pork tenderloin, cut into 1-inch pieces |
1 | onion, diced |
1 | tomato, diced |
1/2 cup | diced pineapple |
2 Tbsp | lime juice |
2 Tbsp | olive oil |
2 Tbsp | tomato paste |
1 | canned chipotle in adobo |
2 Tbsp | adobo sauce |
2 cloves | garlic, diced |
1 tsp | ground cumin |
1/2 tsp each | salt and pepper |
4 cups | sodium-reduced chicken broth |
1 | avocado, halved, pitted, peeled and sliced |
1 cup | corn, cooked |
1/3 cup | finely crumbled feta cheese |
1/4 cup | finely chopped fresh cilantro |
1 | lime, cut into wedges |
Directions
- In slow cooker, combine pork, onion, tomato, pineapple, lime juice, oil, tomato paste, chipotle, adobo sauce, garlic, cumin, salt and pepper. Stir in broth.
- Cover and cook on Low for 6 to 8 hours or High for 3 to 4 hours or until pork is very tender.
- Meanwhile, cook pasta according to package directions; drain. Stir pasta into slow cooker until well combined.
- Divide soup among 4 bowls. Top with avocado, corn, cheese and cilantro. Serve with lime wedges.
Tips
Substitute boneless skinless chicken thighs for pork if preferred.
