Salmon and Vegetable Garden Salad

Ingredients
3 cups | No Yolks® Broad Noodles |
1 cup | green beans, steamed, cut into bite-size pieces |
1 cup | cherry tomatoes, halved |
1 can (14.75 oz) | sockeye salmon, drained and flaked |
1 Tbsp | fresh chives, minced |
1/4 cup | tomato juice |
1 Tbsp | tomato paste |
1 Tbsp | white wine vinegar |
2 tsps | olive oil, divided |
1 | garlic clove, minced |
1 Tbsp | fresh basil leaves, minced |
1/2 tsp | salt |
1/4 tsp | freshly ground black pepper |
1/4 tsp | paprika |
Directions
- Prepare noodles according to package directions. Rinse with cold water. Drain well.
- Combine cooked noodles, green beans and tomatoes in a large salad bowl. Add salmon and chives. Toss gently to mix.
- In a small bowl, mix tomato juice, tomato paste, vinegar, oil, garlic, basil, salt, pepper and paprika. Pour into salad. Toss gently but well.
