One Pot Miso Noodles

This light, broth soup is exceptionally easy to make and, thanks to the rich, salty infusion of miso and chicken broth, will have you enjoying every slurp!

Ingredients

2 cupsNo Yolks® Extra Broad Noodles
4 cupschicken broth
1 Tbspwhite miso
1/2 cupcarrot, thinly sliced
1/2 cupsnow pea pods, thinly sliced
1/2 cupfresh mushrooms, thinly sliced
1/4 cupsliced green onions

Directions

  1. In a medium sauce pan, bring broth to a boil.  Add miso and whisk until dissolved.
  2. Add noodles; reduce heat and gently boil 8 minutes.
  3. Add carrots, snow peas and mushrooms.  Continue to cook 2 minutes.
  4. Stir in green onions just before serving.
