Cheesy Miso Sweet Potato Noodles

Ingredients
1 package | No Yolks® Extra Broad Noodles |
1/4 cup | unsalted butter |
3 Tbsp | all-purpose flour |
2 cups | whole milk |
1 (15-oz) can | sweet potato puree |
2 Tbsp | white miso paste |
1 tsp | Dijon mustard |
2 cups | shredded cheddar cheese |
1 tsp | crushed red pepper flakes |
2 | green onions, thinly sliced |
Directions
- Cook the No Yolks® Noodles according to package instructions. Drain. Set aside.
- In a large heavy-bottom pot or Dutch oven over medium heat, melt the butter. Add the flour and cook until no lumps remain, about 1 minute.
- Whisk in the milk, sweet potato puree, miso and mustard. Simmer, over medium-low heat, stirring frequently, until sauce thickens, about 10-15 minutes.
- Remove from heat and stir in the cheese until smooth, about 2 minutes. Add the noodles and toss to coat. Top with the crushed red pepper flakes and green onions. Serve.
