Cold Vegetable Noodle Bowl

Ingredients
12 oz | No Yolks Stir Fry Noodles |
8 oz | sugar snap peas |
1 cup | frozen edamame, thawed |
8 oz | shredded carrots |
1 can | (8 oz.) sliced bamboo shoots, drained |
lemon vinaigrette dressing | |
1 can | French fried onions |
fresh mint leaves (optional) |
Directions
- Prepare noodles according to package directions. About 1 to 2 minutes before pasta is ready, add peas to boiling water to blanch. Drain and rinse noodles and peas in cold water.
- In a large bowl, combine cooked noodles, snap peas, edamame, carrots and bamboo shoots. Add dressing and toss to coat all ingredients. Chill.
- Serve topped with onions and mint leaves.
